THANKSGIVING TURKEY

INGREDIENTS

1 turkey (15-22 pounds)

4 tablespoons Savory Poultry Rub

4 tablespoons olive oil

INSTRUCTIONS

Step 1

Preheat oven to 425°F. Remove the giblets and neck. Loosen the skin from the breast.

Step 2

Season the cavity, under the skin and entire bird with olive oil and Savory Poultry Rub. Place the turkey on a rack in a roasting pan.

Step 3

Cook for 30 minutes, then reduce heat to 325°F. Cook turkey for 15 minutes per pound.

Step 4

Remove the turkey from pan. Cover with foil for 20 minutes before carving. 

SAVORY RECIPES

THANKSGIVING STUFFING

INGREDIENTS

8 cups white bread, torn into 1 inch pieces

2 tablespoons Savory Poultry Rub

10 tablespoons butter

2 teaspoons salt 

2 yellow onions, diced             

2 cups chicken stock, divided  

2 stalks celery, cut into ¼ inch pieces

2 eggs

INSTRUCTIONS

Step 1

Preheat oven to 275°F. Arrange bread on rimmed baking sheet. Bake for 45 minutes or until the bread is dried out and crispy. Let cool to room temperature.

Step 2

Preheat oven to 350°F. Lightly butter 9×9 inch baking dish. Set aside.

Step 3

In a large skillet over medium-high heat add the butter. Once melted add the onion, celery, Savory Poultry Rub, and salt. Sauté for 10 minutes, or until just brown. Stir in 1 cup stock. Let cool to room temperature.

Step 4

In a large bowl, whisk the remaining 1 cup stock and the eggs. Stir in the bread, and reserved onion mixture. Mix well. Transfer to the prepared dish.

Step 5

Cover with foil and bake for 40 minutes. 

*The stuffing can be covered refrigerated at this point for 1 day. Then proceed to step 6*

Step 6

Remove foil and bake for 40-45 minutes until the top is brown and crispy. 

SAVORY RECIPES

CHICKEN SALTIMBOCCA

INGREDIENTS

6 – 3 ounce chicken cutlets or boneless skinless breasts

2 tablespoons Savory Poultry Rub

¼ cup parmesan cheese

6 slices prosciutto

2 teaspoons olive oil

INSTRUCTIONS

Step 1

Preheat oven to 350ºF.

Step 2

Place the chicken flat on the work surface. Sprinkle the chicken with Savory Poultry Rub and parmesan cheese. Wrap 1 slice of prosciutto around the middle of each portion of chicken.

Step 3

Heat the oil in a large oven-safe skillet over high heat. Add the chicken so the   overlapping prosciutto is face side down in the pan. Sauté for 2 minutes. 

Step 4

Transfer skillet to the oven and cook for 8-10 minutes or until internal temperature of chicken is 160ºF.
